Should I use Freshly Milled Flour or All Purpose Flour?
One of my favorite things about this recipe is that it can be made with all purpose OR freshly ground flour!
I’ve tested this recipe with both freshly ground and all purpose flour. It turns out beautifully either way!
(the bread you see in the photo was made with freshly ground flour — my preference!)
How much flour should I use?
This recipe calls for 5 cups of flour and one cup of dry oats.
Add in all of your oats and 4 cups of flour first.
Then, slowly add in your remaining cup of flour while mixing your dough.
As soon as your dough no longer sticks to the sides of your mixer, stop adding flour.
You may need a little more OR a little less than 5 cups of flour for this recipe.
Adding too much flour will result in a dry loaf of bread, so add that final cup of flour in slowly!
What kind of oats should I use?
Quick oats or rolled oats — it all comes down to preference!
If you’re using a stand mixer, rolled oats will break down to the size of quick oats if you knead the bread for a full 10 minutes.
If you are kneading by hand, the rolled oats may stay closer to their full size.
It all comes down to what texture you prefer!
What should I grease my bread pan with?
I grease my bread pan with butter or olive oil.
