One of the tastiest ways to eat cabbage!

This unstuffed egg roll is my favorite way to cook (and eat!) cabbage!
It is extremely flavorful and inexpensive to make!
It’s also a great last-minute recipe to make if you’re in a rush to make dinner. It only takes about 25 minutes to make.

Unstuffed Egg Roll

Ingredients
- 1 pound ground beef
- 2 TBSP olive oil
- 1/2 medium cabbage
- 1 onion
- 2 carrots
- 1 tsp ground ginger
- 2 1/2 tsp onion powder
- 1 tsp salt
- 3 TBSP butter
- 1/4 tsp black pepper
- 2 tsp brown sugar
- 1/2 cup coconut aminos
- Cooked white rice (about 2 cups of cooked rice)
Instructions
- Shred your cabbage, carrots, and onion (or cut them into very small pieces. Set aside.
- With 2 TBSP of olive oil in a pan, cook 1 lb of ground beef, ground ginger, onion powder, salt, and black pepper until your beef is fully cooked. Scoop out your cooked beef and set aside.
- In the same pan, cook your cabbage, carrots, onion, and butter until fork tender.
- Add your cooked beef back into your pan with your veggies.
- Add your brown sugar and coconut aminos. Cook for an additional 3 minutes.
- Remove from heat. Top with cooked white rice (optional).

Should I shred or cut my veggies?
It’s totally up to you!
You can use a food processor to shred your veggies, or shred them by hand.
You can also just chop up your veggies finely. That’s what I normally do.
Do I need to peel my carrots first?
Yep! Peel those carrots!
If you’re using baby carrots, you don’t need to peel them. They come already peeled.
Can I use soy sauce instead of coconut aminos?
Sure!
I avoid soy sauce for health reasons, but you can absolutely substitute it for the coconut aminos.
If you use soy sauce, I’d omit the brown sugar from the recipe, taste it, and then decide if you want to add that little bit of brown sugar or not.
