Tortillas with Freshly Ground Flour

Ingredients
- 2 1/2 cups freshly ground flour
- 1/2 tsp salt
- 1 cup warm water
Instructions
- Knead all of your ingredients together for 10 minutes.
- Divide evenly into 16 balls.
- On a lightly floured surface, roll out each individual ball into a thin circle about 8" in diameter.
- Preheat a pan on your stove to medium heat. Avoid using any oil. If you feel oil is needed, only add a tiny amount for the first tortilla.

How do I know when to flip my tortillas?
Flip each tortillas when air bubbles start forming on your tortillas.
The air bubbles “lift” the top layer from the bottom layer of the tortilla a bit.
This helps make for some very soft tortillas!
You’ll want to be sure that you have kneaded your dough for a full 10 minutes for this reason — it helps make some great air bubbles and soft tortillas!
Do I need to flip my tortillas?
I flip my tortillas once, but only for about 5 seconds before I remove and transfer to a plate.
Help! My tortillas aren’t rolling out very well!
Tortillas that are giving you a hard time while rolling out can be caused by a couple things.
You may have added too much flour. This can make the dough too stiff to roll out.
You may not have kneaded the dough for long enough.
You may have added too much flour into the dough while rolling it out on a floured surface.
You can try fixing some dough by kneading it for a bit longer, or adding a little bit of water back into the dough!
(If you want to add water into your dough, first add a small amount of water and knead it into your dough. Then, sprinkle just a little bit of flour into the dough to bring it back together!)
Can I use a tortilla press?
You can use a tortilla press to get started with these tortillas, but I still recommend rolling them out to make sure they are thin enough.
I have a tortilla press, but I find that it really only works best with corn tortillas, not flour tortillas.
It’s much better to just roll out flour tortillas with a rolling pin.
